Dear Lazyweb: iPod gymnastics

Believe it or not, I am the proud owner of a new 5th gen iPod with video. w00t.

I've had it for about a week now, and I have questions:

1. The second time I plugged it in to my Windows PC to sync, iTunes crashed and decided to delete everything on my iPod at next startup. WTF? Is there some way to prevent iTunes from arbitrarily deleting the entire contents of the iPod? It took hours to sync 80GB of music, after all...

2. Is there an E-Z way to move video from a DVD to the iPod? (Hello DMCA.)

3. The thing keeps wanting to auto-sync itself, but I have way more than 80GB of music on my PC and I don't trust Apple to magically sync only the stuff I want on the iPod. Any suggestions for how you deal with this sort of situation (short of finding a 500GB drive that will fit in the iPod)?
